We came off a long week of hectic work schedules and a sick little boy,so Saturday was the perfect time to kind take a breather and stay put for the day. Embracing this very summer like weather in Southern California, we ended up cooking on the grill. With a pound of shrimp in the fridge and some boneless chuck steak, deconstructive burritos kind of just happened.
It was very quick and easy meal to prepare, and it was with ingredients you will already find in your fridge and pantry. Slicing up pretty much all the veggies we had on hand and a generous amount of garlic, we drizzled some olive oil over them and roasted veggies on the grill.
Keeping along with a quick and easy meal, the chuck steak was just seasoned with a little salt and pepper. We diced up garlic again, and added it with the shrimp. A squeeze of lemon along with salt, pepper and a little paprika, and they were ready just to be sautéed in a little bit of olive oil.
Taking everything and wrapping in tortilla was somewhat of an after thought, but it worked out perfectly. With a little fresh onion and tomato, and in Matt’s case, horseradish wasabi it was a perfect meal for summer like winter day.
